Joe Bishop was born March 17, 1932, in Corsicana, Texas, to parents Earl and Martha Bishop. He went to his heavenly home on May 1, 2026, in Hobbs, New Mexico.
Joe attended Hobbs High School where he met the love of his life, Mitzi Appleton Bishop. They were married on November 1, 1950. They had 3 children, Donny, Ronny and Joy. Joe began working as a grocer at an early age and managed many grocery stores across Texas. He held many jobs in his long life, including bus driver where he loved driving the activities bus especially for the Hobbs High track team, Home Depot associate when he was in his 80’s and could outwork anyone there, groundskeeper, Joe and Mitzi owned and operated Clay and Guy’s Corner Grocery and Baskets ‘n’ More but the most important job for Joe was caregiver to his wife Mitzi.
Joe lived his life centered around God, family, especially his wife of 75 years, and hard work. Joe enjoyed gardening and wanted the best-looking yard in town, drinking Dr. Peppers, rooting for the Hobbs Eagles, and was one of the biggest fans of the Dallas Cowboys. Win or lose, he never lost his love for them. He enjoyed teaching his grandsons new skills, taking them fishing and attending their activities.
He was preceded in death by his parents, his five siblings, and son Donny Bishop.
He is survived by his wife Mitzi Bishop, son Ronny (Kay) Bishop of Taylor, Texas, daughter Joy (Willis) Mossman of Hobbs, New Mexico, and grandsons, Shannon (Teresa) Bishop of Thorndale, Texas, Brandon Bishop of Taylor, Texas, Guy (Alyssa) Mossman of Hobbs, New Mexico, and Clay Mossman of Hobbs, New Mexico.
